Baking has become a creative outlet for me it’s art , therapy, and recreational. I have also become unenthused with traditonal foods. So being able to create and taste all in one has been nothing short of success, because success is how we measure it.
A few weeks ago I found myself craving cake but not just any cake. Homemade, fresh cake! Yes! Homemade!

- 1 cup white sugar
- ½ cup butter
- 2 eggs
- 2 teaspoons vanilla extract
- 1 ½ cups all-purpose flour
- 1 ¾ teaspoons baking powder
- ½ cup milk
- 1 tablespoon of vegetable oil (optional)
Preheat Oven to 350.
Combine dry ingredients! Mix for even distrubution. Add eggs, then wet ingredients. 1 tablespoon of vegetable oil is optional and only to create moisture. This will be solely preference.
Grease and flour the baking pan. I reccomend a 9 x9 pan however a 13 x9 will do the job. Pour in cake batter to bake for 20-25 minutes. Cook time will be faster than boxed cake mix. I suggest periodically checking cake with a clean toothpick each time. Simply poke into the cake and remove until the toothpick comes out clean. Once cake has reached desired golden brown remove and let cool before icing. This cake is especially good with fresh fruit or compote.
