Fried Rice 🍚

Fried Rice is a absolute favorite in my house! I personally dont care for fried foods but I have learned a healthier alternative that satifies the craving! It is very simple to make but requires a two day prep!

Steam your rice the day prior to cooking it! This is sworn to be the ultimate key of getting the rice perfect. I would even suggest adding spices at this time also. Rice will need to be refrigerated over night.

Once your rice has been prepped to be fried to the gawwwwds please wash all of your fresh ingredients with cool water.

Ingredients are so simple!

Brown Rice

Fried Rice Spice

Soy Sauce

Sesame Oil

Vegetable Oil

Green Onion

Yellow Onion

Green bell pepper and carrot/ pea mix are great optional adds!

Once all fresh ingredients are clean. Chop or dice for cooking.

Use the largest skillet you have and add a tablespoon of vegetable oil to heat. Once nice and hot add the rice and add spice if this hasn’t been done so. Add fresh ingredients at this time. Occasionally flip and turn the rice using a spatula. Let it fry for a minute or two before flipping while adding shakes of soy. If needed add light oil drops. How fried the rice should be is preferable.

Once rice is completely browned add sesame oil and stir. You don’t want to cook the rice in sesame oil from my experience and trying different recipes. It’s a great flavoΓΉr addition!

Add soy , sweet and sour , and or red pepper! Enjoy!

Air Fried / Baked Roasted Red Pots

Baked potatoes are delicious but become boring. Mashed potatoes a classic! But soooo repetitive! I wanted a vegetarian meal a few nights ago which ended up simply salad and Italian herb roasted red potatoes.

They were simple to make and very easy on my body! I loved red potatoes already so no surprise I was satisfied! They taste clean and natural. Yellow potatoes aren’t bad either but if I had to choose ……. RED POTATOES for the win!

Follow me! Air fryer or conventional oven can be used. Air fryer at 200Β° for 15 minute intervals cooked until preferred texture. Conventional oven 300Β° in a pan coated with vegetable oil or non stick spray. Be sure to season potatoes before cooking! Potatoes must be covered for portion of the cook time in the conventional oven. Otherwise they won’t soften.

Air – Fried Roasted Red Potatoes ☺️


Red potatoes (cleaned) completely skinned is optional.


Non stick cooking spray



Italian Herb Seasoning (basil, marjoram, oregano, rosemary, and thyme)

Once your potatoes are clean. Dice them and season them.

Prepare cooking method air fryer or oven.

Spray air fryer basket with non stick cooking spray. Preheat oven!

Put potatoes in air fryer basket and run fryer for 15 minutes on 200Β° when time is up you will shake contents around to ensure even cooking is achieved. And start another 15 minute interval. Repeat until done!

Place potatoes on oil coated pan and cover! Cook while periodically checking softness. This can be done using the toothpick method. If you’re not sure what that is about refer to my previous article here . Potatoes should be soft but not baked potato soft. Once potatoes are soft. Covering can be removed and cooking can continue until you have a golden brown crisp skin.

When potatoes are thoroughly cooked coat with butter , add more salt , pepper , and Italian seasoning to taste!

This is a great dish to serve with wine 🍷 πŸ˜‰

Vegetable Lo Mein πŸ‘©β€πŸ³πŸœ

Fried Rice was requested a few nights ago for dinner, I personally don’t have to have it. I thought of another dish I’d like to have in genre. Lo Mein ! I ended up with a crisp light pure taste! I could taste all of my ingredients vs a forkful of salt every bite! Delightful!

Here’s how I achieved flavorful noodles without meat! Of course if desired add whatever you’d like!


1 Fresh bunch of green onion

1 bag of Bean sprouts

1 Green Bell pepper

1 Fresh Onion

Soy Sauce

Peanut Oil

Spaghetti Noodles

Bring a pot of water to a boil. Once boiling , add desired amount of noodles.

Rinse and clean all fresh produce. Be sure to use cold running water. Chop all veggies to be sauteed. Bean sprouts should be washed thoroughly and by themself. Bean sprouts should be sauteed slightly first before adding other veggies.

Once noodles have cooked to desired texture. I suggest not too soft. Remove from heat and rinse with cool water. Heat peanut oil in skillet. Once hot add noodles! Toss and scramble noodles while adding light soy sauce. Add soy until desired flavor is achieved ! Noodles should be slightly fried yet moist! Add vegetables for one more toss and even heat.

Nom Nom! πŸ˜‹

You can add sunflower kernels , sesame chicken , and or curry chicken! Lo Mein is limitless!

I’ve grown to understand the power of snacks. Adults love snacks! Kids love snacks! Women and children love snaaaaacccccccks! When I hear the word snack that’s how I hear it. Snaaaaaacccccccccck! We have been snacking more lately at home indefinitely ! I put together a healthy snack list of ideas for the snaaaaaaaaccccccck lovers!

Toothpick Method

A baker’s secret. I mention this often in my baking articles. I wanted to break this down for those whom may not be familiar. The toothpick method is simply just a way to check your goods as they cook. This only works for baking bread dishes to ensure they are well done but not over cooked.

Take a clean toothpick.

Poke into the center of the dish. If it’s not done cooking. Repeat until the next toothpick comes out clean!

It’s an act and repeat method!

Brownie On Top!

I had a sweet tooth a week ago! I literally wanted a cookie and a brownie! I prefer fresh baked goods vs packaged goods. I love the taste of freshness , chocolate , and gooey-ness! I ended up baking a total of three pans! One for my household , one for a birthday celebration , and one for my sister per her request! They were oh so good! I cheated on these just a tad here’s how …..

Pre-made Cookie Dough ( of your choice)

Box brownie mix – which needs the ingredients listed below!




A metal non-stick pan works best. If it is not non stick you will need to coat the pan with oil or non stick spray lightly. Mix the brownie batter as follows on the box. Brands do differ , be sure to follow the brand’s steps precisely! Cover the pan with a layer of cookie dough at the bottom. Be sure to spread it out nicely for a even bake. You want to flatten it a bit to ensure it cooks properly! Once completed pour the brownie batter on top. You’re almost ready for your first bite πŸ˜‹

Bake at 350! Periodically check with the toothpick method. I noticed while baking my batch they smelled burned. They did not in anyway! Be sure to let them cook thoroughly to avoid food- borne illness. The toothpick should come out clean once they are done! Pull them from the oven and allow them to cool! Cut and Serve! Parmesan Butter Noodles🍜

I love a good pasta! It seems like you run into road blocks with flavor. It’s either red sauce or white! I binge watched Atypical on Netflix a few weeks ago and Sam swore by butter noodles! I had to give it a try πŸ˜‚πŸ˜‚πŸ˜‚πŸ˜‚

It was truly nagging because I all I could think about was butter noodles! Butter noodles , Butter noodles , Butter noodles!

Very Simple , Quick , and Easy with very few ingredients! I do recommend only preparing what will be consumed. I personally did not care for them as leftovers.

1/2 box of Fettuccine noodles or Spaghetti noodles

8 tablespoons of Butter

Parmesan cheese sprinkles to taste!

Salt and Pepper as desired!

OPTIONAL: If you’re feeling festive add some Italian seasoning!

Bring a pot of water to a boil. Add dry noodles to water. Cook until softened. Noodles should have pale solid color. Drain and rinse! Add eight tablespoons of butter. Stir noodles and butter thoroughly to ensure even distrubution. Lastly , sprinkle in ALL the parmesan cheese you’d like. Serve & Enjoy!

Homemade White CakeπŸ’•πŸ°πŸ΄

Baking has become a creative outlet for me it’s art , therapy, and recreational. I have also become unenthused with traditonal foods. So being able to create and taste all in one has been nothing short of success, because success is how we measure it.

A few weeks ago I found myself craving cake but not just any cake. Homemade, fresh cake! Yes! Homemade!

White Cake with Homemade Vanilla Icing
  • 1 cup white sugar 
  • Β½ cup butter
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 ¾ teaspoons baking powder
  • Β½ cup milk
  • 1 tablespoon of vegetable oil (optional)

Preheat Oven to 350.

Combine dry ingredients! Mix for even distrubution. Add eggs, then wet ingredients. 1 tablespoon of vegetable oil is optional and only to create moisture. This will be solely preference.

Grease and flour the baking pan. I reccomend a 9 x9 pan however a 13 x9 will do the job. Pour in cake batter to bake for 20-25 minutes. Cook time will be faster than boxed cake mix. I suggest periodically checking cake with a clean toothpick each time. Simply poke into the cake and remove until the toothpick comes out clean. Once cake has reached desired golden brown remove and let cool before icing. This cake is especially good with fresh fruit or compote.

Strawberry Smoothie

Lets just clear the air! STRAWBERRY IS HIGH IN VITAMIN C AND FIBER!!!!!

There’s nothing more satisfying than a smoothie when your’e slightly hungry and just need a few calories. Often , I wake up and I’m just not in need of a bunch of calories to get my day started. A smoothie is usually my quick go to!

Measurements will always vary depending on the quantity seeking to be dispersed.

2 cups of frozen Strawberries

1 cup of yogurt ( this does not have to be dairy yogurt)

1 cup of Milk ( does not have to be dairy milk) almond milk , cashew milk , goat milk , etc. are substitutes. Milk can be added until preferred consistency is reached.



Agave Syrup


This recipe can also be made water based. Follow recipe minus the milk additives ( milk and yogurt). Add water until preferred consistency is reached. Add sweetener to taste.
